Lady Apples from Reed Valley Orchard
We had a small group on this chilly night, a bowl of petite Lady Apples -- oldest known heirloom apple variety -- that were gifts from Reed Valley Orchard, where they grow the apples but do not have enough of them to sell. Apples almost seemed to be a theme for this Supper, showing up in a couple of savory dishes and gracing one of the surprisingly large array of desserts. Interesting, and delicious.

We had:

Split Peas: Salt, cayenne, Marmite, diced onion (raw), sour cream, half & half
Sausage and Cabbage
Chleb - Czech Peasant Bread

Rice Pudding "Gonzo"

Sadly, we have no pictures of this meltaway deliciousness, but Beth Ellen Rosenbaum brought an incredible rice pudding to Cornbread Supper on May 10, 2009.

She shared this recipe: Rice Pudding "Gonzo."

The header to this Gourmet Magazine recipe, republished on Epicurious in January, 2002, says that this recipe takes it name from firefighter Steve "Gonzo" Gonzalez, of Company 18 of the FDNY, which suffered a great loss of life at the World Trade Center.

Czech Peasant Bread - Chleb

Cornbread Supperian Michael Kennedy often provides this popular bread, and now has shared the recipe. Thank you, Michael!

Makes four loaves of three+ pounds each. (Adjust volume as you wish.)

In a metal or glass (not plastic) measuring cup put 1 teaspoon sugar and two packets (4 tablespoons) active dry yeast. Fill cup half full of warm (not hot) water. Let yeast rise to the top of the cup. While this is occurring:

In a very, very large bowl (this stuff rises a lot) mix the following:

8 cups white bread flour
8 cups whole wheat flour
3/4 teaspoon salt

Prepare four cups liquid, including the cup of yeast water, a cup of honey (optional), and the rest water. (If you use honey stir it in thoroughly with the rest of the liquid.)

Pour liquid into mixture and stir it up.

Add 5 to 7 more cups of water, stirring it in as needed. Mixture should be between glutinous and gloppy in consistency. (Not like regular bread dough -- more like stiff cake batter.)

Cover mixture (plastic bag? bowl cover?) and allow to sit in a warm place for about six to seven hours. It can go as long as ten hours. (I heat up the oven for a bit, then turn the heat off, and put the bowl in.)

After it has risen, if you wish, toss in one to two pounds of chopped dried fruit and nuts: raisins, walnuts, apricots, dates, etc -- whatever you have on hand. (Preheat the oven to 375F while you add the extras and put the batter into the bread pans (sprayed with Pam or other oil).

Turn batter into four Pam-ed or greased standard bread pans. It will come about 3/4ths the way up and rise from there.

Bake in 375F oven for one hour and 40 minutes. Allow 1/2 hour for the loaves to cool on a rack after removing from the pans.

You will need a good bread knife. One or two slices w/ good olive oil or butter in the A.M. is a full breakfast. With the honey, fruit, and nuts a slice (1/15th of a loaf) is about 280 calories (or, I think, 5 Weight Watcher points).

A loaf in a Zip-Loc bag freezes well.

Chicken Soup, Bengali Curry Chicken, Posolé, Mexican Cornbread, and More on January 18, 2010

The weather outside was spectacular for MLK Day and MLK Day of Service in Lexington on January 18, 2010. And the food and warmth inside - spectacular as well.

Multiple lovely bottles of wine appeared, along with these foods, as described by their providers on small white slips of paper, left behind for your documentarian's enjoyment, and yours:
  • Bulgur Wheat with Carrots, Raisins & Almonds
  • Bengali Curry Chicken
  • Bengali Lentils
  • Roasted Veggies. Some more local than others. Vegan.
  • Snipped Sage, Local Mozzarella, Organic Tomatoes, EVOO!
  • Posolé: Black Beans, Pork, Onions, Garlic Hominy, Tomatoes, Jalapeños, Green Pepper, Chilis
  • Chicken Soup w/Rice
  • Hot Skillet Cornbread/Hot Water, Not Sweet, Not w/Gluten, Vegetarian
  • Hot Black Skillet Cornbread w/Add-ins: Parmesan, Black Peppercorn, 4th & Elm Fresh Thyme. Vegetarian
  • Rona's Sister Paula's Mexican Cornbread w/Chipotles, Beef, Cheese. No gluten, Not vegetarian.
And I spied with my eagle eye some foods without paper descriptions: shrimp with cocktail sauce, some homemade brownies (before they were snatched), some beautiful loaves of freshly made bread, and more that people did not label.

A perfect Monday feast.

Catch Up: December 28, 2009, January 4, January 11, 2010

I'll confess straight out and first thing: Cornbread Supper documentation has slipped these past weeks. It wasn't just the holidays - they were holidays! They were fine! It was that your documentarian missed these events, courtesy of an Uninvited Guest that stole her voice and left a sore throat as a poor replacement.

So what does a documentarian do when the documenting an event that she could not attend? She relies, dear readers, on little slips of paper, tiny documents after all, that CSupperians -- some of them, anyway, the dutiful ones -- place near the dishes they bring to the supper. If the vocally-challenged documentarian is paying good attention, she posts the lists of luscious dishes each week.

Your documentarian, on the other hand, didn't pay quite enough attention. She piled all the slips of paper together, and then dropped them, and, having failed to require even the dutiful-est food providers to date their Food Description Slips, she lists them all at once, all in one list, in a catch-up post, as in this:

Wonderful wines and sparkling water show up in abundance, too. These bear their own labels, like "San Pellegrino," and variations on a theme or Riesling, Sauvignon Blanc, Chardonnay, Merlot, Cabernet Sauvignon, Blackberry, Shiraz, and Pinot Noir. Oh yes, and sometimes Bud Light and its other buds.

Corn is the most wine-friendly food of all. CSupperians benefit from that affinity every Monday night.
